Existing Market:

The people I interviewed say I should market to people who are not vegetarian but advertise as a health food place to people who work out and are trying to lose weight.

New Market:
For my new market, I interviewed big meat-eaters. People who practically live on meat and are not huge fans of vegetables. In the interviews I did, people mostly told me the same thing. That I should make things that look and taste like meat or to make dishes where meat isn’t missed. Their biggest concern about my restaurant was that the dishes would not be big enough to fill them or it would be based on vegetables.

Conclusion:
These interviews taught me that I really need to appeal to people who do not like vegetables and prefer to eat meat based meals. This was not surprising to me because most people are not familiar with plant based meals and believe most vegetarians live on grass and tofu.

I don’t think there would be any problem to make dishes that were satisfying to a meat eater. For example, I wouldn’t try to imitate a burger or chicken tenders. Instead, I would make a lasagna or soup where meat wouldn’t be missed.

  1. Hey! I think that once you got people into your restaurant that they would realize that the meals can be meatless and still satisfying. I think you could offer small free samples of some of your dishes that people are less likely to try when you first open so that they can see how good they are without spending money on something they may think they might not like!
